Recipe of the Month - 2008 January
This is the North Metro recipe of the month for January, 2008.
Toffee Bars

| 1 | cup | butter |
| 2 1/4 | cups | brown sugar |
| 1/8 | teaspoon | salt |
| 1 | cup | light corn syrup |
| 15 | ounces | sweetened condensed milk |
| 1 | teaspoon | vanilla |
| 4 | tablespoons | butter |
| 4 | tablespoons | cream |
| 8 | cups | corn flakes, gluten free |
| 2 | cups | coconut |
| 1 | cup | walnuts -- chopped |
1. In a saucepan, melt butter over medium heat. Stir in sugar and salt, then add corn syrup and mix well. Add sweetened condensed milk, stirring constantly. Continue stirring and cook to 245F. Remove from heat and stir in vanilla.
2. Stir in 2nd amount of butter and cream until butter is melted. Stir in corn flakes, coconut and walnuts (if using).
Press into 9 x 13 baking pan. Cool and cut into squares.
